“Kaga-ryori” is the regional cuisine of Kanazawa and the surrounding Ishikawa area. It’s most famed dish is Jibuni – a hearty stew made with duck (sometimes chicken) simmered in thick dashi stock with seasonal vegetables and wheat gluten.

There’s an interesting story behind how the name “Jibuni” came about. Some say it’s onomatopoeia – based on the “jibujibu” sound the ingredients make when simmering in a pot. Another story suggests that the name is derived from “gibier”, which means duck in French, the star ingredient of Jibuni. Whichever it is, one thing is certain: Jibuni is absolutely delicious and a must-try when you’re in Kanazawa.

And when you do find yourself in Kanazawa, there is one place that’s almost synonymous with Jibuni: Kagaya Kanazawa. Conveniently located right next to Kanazawa Station, Kagaya is a famous restaurant known for their “kaiseki ryori”, the pinnacle of seasonal Japanese cuisine that is both a feast for the palate and the eyes. For ¥1,080, you can indulge in Jibuni, along with other regional favourites of Ishikawa.

治部煮の治部とは、「カモ肉を鍋に入れ出汁(醤油、たまり、煎り酒などを混ぜる)を付けながら焼き、汁を張った椀にワサビを添えて出す料理」とカモ肉を使った鍋焼きのことで、材料を「じぶじぶ」と煮ることから治部煮とよばれました。また、カモ肉を使うことからフランス料理のジビエから変化したとも言われています。最近では、鶏肉を使用する場合もあります。現在、金沢で有名な治部煮を出してくれるお店は「加賀屋 金沢店(KAGAYA KANAZAWATEN)」です。1080円と少々値は張るのですが、煮つけなど他の金沢の郷土料理もありおすすめです。場所も、金沢駅から徒歩1分と旅行中に行きやすいと思います。
