Located in the west part of Saga Prefecture, Ureshino Onsen hot spring resort has a long history of healing people’s minds and bodies. Because the hot spring here is said to have skin rejuvenating effects and after a bath the skin becomes very smooth, it is well known as “Bijin no Yu (hot spring of beauty)”. The charming townscape with about 50 ryokan inns lined along the Ureshino River is reminiscent of the “good old days” of bygone Japan.

And a must dish in Ureshino is “Onsen Yudofu (hot spring boiled tofu)”. Tofu is boiled in hot spring water that is suitable for drinking. When boiled in the hot spring water, the tofu is dissolved by the components of the water, so the broth turns thick and cloudy. The mild taste as if cooked in soymilk is exquisite. Even though yudofu is a very simple dish, ways to enjoy it differ according to the restaurant, each of which has a particular sauce and serving idea. When in Ureshino don’t miss this delicious local specialty.

Ureshino is well known for green tea production too, so sweets made from green tea are also worth a try.
