I would like to introduce a cheap and delicious dish from Hita City in Oita – Hita yakisoba. Many places in Hita offer this dish, but I recommend having it at Sankyū.
Besides the dish at this restaurant being ‘shinken ni’ (‘really’ in Oita dialect) delicious, I really like the boss too! He is an energetic and cheerful man who lifts weights as a hobby. He definitely puts his muscles to good use in the kitchen, serving up good food every day!
Now, what is Hita yakisoba? It is a dish where noodles are grilled on an iron plate until the noodles turn brown and crispy. Ingredients like bean sprouts, onions and pork are added to the noodles. Sounds simple, but so flavorful!
How is Hita yakisoba cooked at Sankyū? First, thick noodles is boiled in an iron pot until they rise to the surface. At the same time, pork will be cooked on the hot grill. Once the noodles are ready, they are transferred to the hot grill, covering the pork completely.
Once the noodles start to curl up, and then start to brown, sauce is poured on top. The aroma of the sauce and the burst of steam rising from the yakisoba makes my mouth water! Finally, bean sprouts are added and everything is mixed together quickly until the sauce coats everything evenly. The dish is done!
Sankyū has raised tatami seating or counter seats. If you want to see the chef cooking, I recommend you sit at the counter.
