With the origin dating back to 1960, "tori-ten" is one of staple dishes of Oita and can be rightly considered the "soul food" of this area. Even supermarkets and box lunch shops sell it as a standard item. It looks like fried chicken; however, as the name says, it is tempura. The recipe is very simple: remove bones from chicken leg, and cut it into one-bite-size pieces; season and dip them in batter, then deep fry. That’s it! Though it sounds easy, there is a lot to learn in terms of keeping the same taste and texture in deep-frying, preparation and making the "tare" sauce.
"Marufuku" is one of the most popular tori-ten restaurants in Oita, with a history of over 50 years, and attracts a great number of customers in and from outside of the prefecture. Salt-taste tori-ten, in particular, is excellent.
