After my husband and I arrived at Takayama and deposited our luggages at our ryokan, we asked the staff if they have any recommendations for Hida Beef restaurants and they directed us to Suzuya Restaurant which was 5 minutes walk away from the ryokan.
The restaurant was located in a beautifully preserved traditional house and the interior was simple and tastefully decorated, featuring Japanese style screens, tatami and wood that the staff told us with a touch of pride was Hida wood.
Hida beef is well known in Takayama, particularly the hoba miso style where cuts of Hida beef are cooked with miso paste on a magnolia leaf over a small charcoal burner at the table.
The beef was amazingly tender, juicy and flavorful. With local vegetables, the umami of the miso paste and fluffy rice, we were completely blown away at how delicious the meal was and my husband became a die hard fan of Hida beef.
